Last night I woke up to rumbling thunder and rain pouring on our roof….one of my favorite sounds!  I really love rainy days.  There is just something clean and fresh that makes me smile, plus it gives me an excuse to slow down my hectic pace.

Rain has been a rare thing this year.  The last time it rained I called my neighbor over and asked her if she wanted to sit on my porch and watch the rain—Fortunately she didn’t think I was crazy and we sat on my porch swing and enjoyed watching the rain and my kiddos splashing in puddles.  We lead real exciting lives in these parts.

Rain or shine, my mother has a cup of hot chocolate every day.  This is her recipe.  She has been making it for years.  I have a copy of our church’s cookbook from the 80′s that she gave me when I got married.  She took the time to write her notes in the new cookbook before she gave it to me and this is one of the recipes that has her special notes.

The stuff you will need.

It is not hard to make.  Get the BIGGEST BOWL in your house, or use a giant stockpot.

Use a BIG BOWL or stockpot to combine ingredients.

Dump all the ingredients in and mix them with a slotted spoon.  Put the mix in containers, and you are done.

Yummy Hot Cocoa with Marshmallows

Then to make the cocoa, just heat up water and add the mix…easy stuff.

Hot Cocoa Mix

4 1/2 cups Nestle Quick Powder

9 Cups powdered milk

1 pound non-dairy powdered creamer

1/2 cup cocoa powder

1/2 teaspoon salt

Mix all ingredients in a large bowl or stockpot.  Put in sealed containers.  To make a cup of hot cocoa, just add 1/2 cup dry mix to 1 cup of hot water and stir.  Note–I like to keep most of my mix in the freezer, especially during the summer so the milk powder does not go bad.  Also, it seems like you are putting in a lot of powder to make a cup.  Trust me…that is how much it takes!
